What is a Torta Ahogada?

The torta ahogada is Guadalajara's most iconic dish: a crusty birote bread roll filled with slow-cooked carnitas, completely drenched in a spicy tomato and árbol chile sauce. At El Registro, we've been making it the traditional way since 1981.
